BACON KOFTAS
Serves 4 130 calories
Ingredients
25 g lean smoked back bacon, roughly chopped 5g fresh whole meal breadcrumbs 2 spring onions, chopped 1tbsp parsley, chopped Finely grated zest of 1 lemon 1 egg white Pinch of black pepper 1 tsp paprika
Method
Place the bacon I a blender or food processor with the bread crumbs, spring onions, parsley, lemon zest, egg white and pepper. Process the mixture until it is finely chopped and begins to bind together.
Divide the bacon mixture into 8 even sized pieces and shape into long ovals around 8 skewers.
Sprinkle the koftas with paprika and cook under a hot grill or on a barbecue for about 8 – 10 minutes, turning occasionally, until browned and cooked through.
Serve with lemon rice and salad.
