BANANA BREAD
A no-fuss and no-fail recipe, this all time favourite is a hit with everyone. Bake it at night and serve for breakfast.
Ingredients
2 large eggs 3 very ripe bananas 1 1/2 cups sugar 1 3/4 cup plain flour 1 1/2 tsp baking soda 1/2 cup oil 1/4 cup buttermilk 1 tsp vanilla essence 1/4 cup walnuts (optional)
Method
Preheat oven to 180 degree C / gas mark 4.
Mash the bananas well, with a fork, till frothy. Add the eggs and beat well. Add all the other ingredients and blend well.
Bake for 1hr & 15 minutes, remove from tin and dust with icing sugar.
